Here we look at mainly bivalve molluscs. Mussels, cockles, pipis, scallops, oysters, abalone(paua) and also sea urchins(kina). Served cooked or raw, again freshness is vital. I want to share some of my favourite recipes on their own or tossed with pasta or rice.

In New Zealand we are fortunate for our abundant supply of fish, both salt and fresh water. I'm passionate about this food source. Never freeze fish, catch your quota, and enjoy it fresh. I have compiled my favourite recipes using different species and the appropriate cooking methods.

Crayfish Lobster
All these recipes are interchangable with lobster, the main difference being that lobsters have large crushing pincers. Source them from seafood markets live tanks or New Zealands rocky reefs at depths of 4-250 metres. We will look at a few classic recipes and how to prepare them.

Prawns Crabs
Wide range of sizes and varieties of prawn available from Australia, India, Vietnam, New Caledonia, Thailand and many more international locations. We farm prawns in the central North Island and a fresh water prawn or "koura" from Marlborough. We also have some recipes using the easily sourced paddle crab.

Squid Calamari
Whether using the larger body or tubes, cut into rings or stuffing the baby squid tubes they are great. And one of my all time favourite dishes involving dissecting the female squid, removing the ink or sepia and creating a black sauce combined with fine pasta. We will also look at octopus, not quite so popular but equally delicious.

Barbecue Delights
In New Zealand we love barbecues and make the most of them in summer months. I have to say I prefer a wood fired barbecue but a gas fired one still produces a good result. We will look at the more suitable species of fish, shellfish and crustaceans for this cooking method.
